i baked a peach pie this morning, using flash frozen peaches. after i got it in the oven, i realized that absorbic acid was listed as an ingredient on the peach bag. so i thought it may come out too tart, with the added lemon juice (acid keeps the fruit from darkening). it didnt, in fact its pretty good. my only complaint is that its too runny, even with the extra cornstarch. so, if i do a flash frozen fruit pie again, i'm definitely going to thaw the fruit first and drain the water. i also want to find some powder vitamin c twisty gel caps, and try substituting them for the lemon juice in an apple pie.
